Đun sôi 2 muỗng canh rượu trắng, 1 muỗng canh muối, 50 ml giấm, hành tây, sả. Khi nước sôi, cho chân gà vào luộc khoảng 15 phút.
Vớt chân gà ra, để ráo. Cho chân gà, ớt, tỏi, củ kiệu vào lọ thủy tinh, sau đó, đổ nước giấm đã để nguội ở trên vào, đậy nắp kĩ để trong vòng 2 ngày là có thể dùng được.
