Mực luộc lá lốt ăn rất ngon bởi mực vẫn giữ được vị ngọt tự nhiên, lại dai giòn, chấm cùng bột canh có vắt thêm chanh và vài lát ớt cay cay cho thêm phần đậm đà hơn, hoặc chấm cùng tương ớt cũng rất ngon.
Mực đem rút bỏ mai, dùng kéo lôi bỏ bầu mực và phần nội tạng mực. Rửa sạch rồi vảy ráo. Gừng, sả rửa sạch, sả đem thái lát chéo, gừng thái chỉ.
Cho 1 bát tô nước vào nồi, thả gừng và sả vào. Đun sôi nước, nêm vào nồi 1 thìa cà phê hạt nêm, 1 thìa cà phê bột canh và 1 thìa canh rượu trắng. Đổ đĩa mực vào nồi, đun cho nước sôi bùng lên rồi vớt mực ra đĩa.
Lá lốt rửa sạch, đem thái chỉ 2 lá còn lại để trang trí đĩa. Xếp lá lốt quanh đĩa, xếp mực lên trên rồi rải đều lá lốt thái chỉ lên trên cùng. Hoặc xếp mực vào đĩa, rải lá lốt thái chỉ lên trên, rồi dùng lá lốt loại nhỏ, xếp trang trí ở cạnh đĩa cùng với bông hoa cà chua.
